    Three approaches, in order of how well they work:

    1. Point at what someone at the next table is eating. This has never once let me down.
    2. Photograph the menu, translate it, then point. Works everywhere, nobody minds.
    3. Find the longest queue of locals and join it. Whatever they are having is good.

    Worth carrying: a translation card in Chinese stating any dietary restriction. “No meat, no fish, no seafood, no chicken broth” written out covers most of it — oyster sauce, chicken stock and lard are the usual hidden culprits.
